Wholemeal bread
Easy, quick and healthy. The prepping is really easy and quick. The most time was spent letting the dough rise for 1 hours before baking it in the oven.The bread is really dense and tasty. I love to toast and top with avocado, salt, pepper and sprinkle chilli flakes
Servings: 7 Servings
Ingredients
- 500 grams Wheat flour
- 7 gram Easy bake dried yeast
- 1/2 tsp salt
- 300 mls Luke warm water
Instructions
- Add flour, salt and yeast to a mixing bowl
- Create a hole in the mix and pour some of the Luke warm water.
- Fold the mixture into the water with a spoon. Then start to add more water and mix in.
- You will then need to start using your hands to knead the dough. It will be sticky to begin but as you knead it will be less so. If still too sticky add a sprinkle of flour. You will need to knead the dough for 10 mins
- Place the dough into a clean mixing bowl and cover it with a tea towel to allow the dough to rise. It will rise to double its size in the 2 hours that you leave it to sit.
- Preheat the oven to 200C/400F/Gas Mark 6/180C Fan Assisted.
- Take the dough out of the bowl and place on a sprinkle of flour and knead slightly to remove some of the air. Shape it to fit in a bread tin.
- Oil the bread tin and place the dough in the tin. Take a sharp knife and make a couple of incisions on the top of the dough.
- Bake in the over for 22 to 25 mins or until golden brown.
- When cooked take out of tin and place on cooling rack.
- Once cool it is ready to enjoy. I store it in an airtight container to keep fresh. Use within 2 – 3 days.
Oat Muffins
Delicious and simple recipe. I store it in an airtight container and use within a week. I also freeze some for later use.
Servings: 12 Muffins
Ingredients
- 1 cup Milk Use Almond or coconut milk for vegan
- 1 cup Oats
- 1 Egg For Vegan replace with a banana
- 2 tbsp Coconut Oil
- 1 cup Wholemeal flour
- 2 tbsp Honey Replace with 1 Tbsp of Stevia if you are avoiding sugar
- 2 tsp Baking Powder
- 1/2 tsp Salt
Instructions
- Heat oven to 200C/180C fan/gas 6. Line a muffin trays with paper muffin cases.
- Add oats, flour, baking powder and salt to a mixing bowl.
- Add egg start to mix, then add the milk
- Melt the coconut oil in microwave, take a few second and add to the mix
- Then add the honey and make sure all ingredients mixed in
- Split the ingredients over the 12 muffin cases and place in over on the middle shelf.
- Cook for 20 mins or until golden brown.
- Once cook leaver to cool
Granola Bars
Good for a healthy treat or breakfast on the go.
Servings: 8 Squares
Ingredients
- 150 grams butter or Vegan Butter
- 1/4 cup Honey or Maple Syrup
- 250 grams Oats
- 100 grams mixed nuts
- 100 grams Dried cranberries or raisins or any dried fruit
Instructions
- Preheatt oven to 160C/fan 140C/gas 3.
- Melt butter and put mixing bowl.
- Then add honey, oats, nuts, dried fruit to the bowl and mix together
- Use a silicon baking dish or tin (this will need to be greased with butter pre to ingredients being added)
- Spread ingredients in a baking dish and cook in the oven for 20 mins or till golden brown.
- Take out the oven and let cool for 15 mins before cutting into squares. Let cool completely before storing in airtight container.
Oat Apple Crumble
Simple, quick and healthy dessert
Servings: 2 Servings
Ingredients
- 1 Medium Apple
- 1 tbsp Dried cranberries or raisins or sultanas
- 1/2 tsp cinnamon
- 80 grams Oats
- 1 tbsp Wholemeal flour
- 1 tbsp honey or maple syrup
Instructions
- Pre heat oven to 180C/160C fan/gas 4
- Chop up the apple and add to a small pan with cinnamon and cover it with water. Stir in the dried fruit when just about soft and a bit saucy. Place the mix into a small oven-proof dish and place it to the side.
- Melt the honey and butter together in a pan. Then take off the heat, add the Flour and oats, and mix in. Add the mixture over the apples
- Bake in the oven for 12 mins or until golden brown on top.
- I love to add a couple of tablespoons of Greek yogurt to the top when serving
